It made a world record of 1,041 inches of rain in 1861. North eastern part of India is full of natural treasures with lush green canopies, valleys, mountains, rocky hills, rivers, diverse flora and fauna. The flora and fauna have colorful and rare orchids, ferns, moss plants and dense wood forests in small patches. Orchards of oranges and pineapple are the common sight of Cherrapunji. It is a 60 kilometer drive from the state’s capital Shillong, and is situated 1290 meters above sea level.

Leh Ladakh:

Nestled amidst the immense greenery of the alpine and guarded by 2 of the world’s highest mountains on either side, Leh and Ladakh boast of an abundance of Buddhist monasteries. The best time to visit Leh & Ladakh is between the months of May and September. The weather is warm during this time as these places do not experience rain like elsewhere in India. Cheesy Bread Recipe

Ingredients

Mozzarella cheese 8 ozshredded
shredded sharp cheddar cheese 1 lb
chopped green onion (to taste) 1/2 to 1 cup
mayonnaise 1/2 cup
sour cream (optional) 2 tbsp
cloves garlic, minced 3-4
1 stick unsalted butter,softened to the point of being slightly melted
loaves of French or Italian bread (I used Ciabatta), depending on the size of the loaves 1 to 2


Method
  1. In a large bowl, mix together the cheeses and the green onion. Stir in the mayonnaise and sour cream. In a separate small bowl blend the butter and garlic until smooth. Add the butter mixture to the cheese mixture.
  2. Preheat broiler. Slice loaf of bread in half horizontally, lay crust side down. Spread cheese mixture over the bread. Place under the broiler until nicely browned, about 3 to 5 minutes.
  3. Remove from broiler and let sit for 5 minutes until cool enough to handle. Slice the bread with a bread knife. Serve.

Pani puri

For the Puri

Ingredients

Fine Sooji 1/2 cup
Salt 1/4 tsp
Baking Powder 1/8 tsp
Warm Water 1/4 cup
All-Purpose Flour (Maida) 1 tbsp
Oil 1 tsp
Oil for deep frying


Method
  1. In a shallow mixing bowl, add Sooji, Salt and Baking Powder. Mix well.
  2. Add warm water and soak the sooji.
  3. Sprinkle All-Purpose Flour and knead the sooji for 3-4 minutes until smooth and firm.
  4. Drizzle 1 tsp Oil and knead again for 3-4 minutes.
  5. Wrap dough in a plastic wrap and let it rest for 20 minutes. With 5 minutes left, start to heat oil for deep frying.
  6. Divide dough in small bits and roll out each puri or roll a big round and use a cookie cutter or other cutting device to cut round puris. Oiling rolling surface will make rolling easier.
  7. Deep fry puris until light golden brown and crisp and remove them onto a paper towel lined baking sheet.
  8. Once all puris are fried, remove the paper towel and place baking tray into a preheated (200 degrees F) oven for 25-30 minutes or until all the moisture from the puris is gone.
  9. Bring to room temp before storing in an airtight container.

For the Pani

Ingredients

Water 7 cups
Warm Water 1 cup
Tamarind lemon size chunk
Cilantro (Coriander Leaves) 10 sprigs
Fresh Mint handful
Green Chili to taste
Salt 1 tsp
Dry Mango Powder (Amchur) 1 tsp
Roasted Cumin Powder 2 tsp
Pani Puri Masala 3 tbsp
Black Salt (Kala Namak) 1 tsp
Lemon or Lime Juice 2 tbsp
 


Method
  1. Soak the Tamarind in the warm water for 15-20 min.
  2. Mash with fingers and separate the pulp from the fibers and seeds.
  3. Blend the Cliantro, Mint and the Green Chili with a little bit of Water.
  4. Add to the Balance of the Water.
  5. Strain the Tamarind pulp and add to water.
  6. Add in the balance of the ingredients.
  7. Mix and adjust the spices if needed.
  8. Chill and Serve with Puris, Tamarind Chutney & Potatoes-Kala Chana mixture.

Vegetable Quesadillas

Ingredients

Oil for sauteing vegetables
Green (Spring) Onions
Tomatoes diced
Bell Pepper diced
Green Chilies finely chopped
Spinach chopped
Mushrooms sliced
Salt to taste
Garlic Powder to taste
Red Chili Flakes to taste
Flour Tortillas
Cheese (your choice -Cheddar/Monterrey Jack/Colby) shredded
Oil for pan frying


Method
  1. Use as much or as little of the vegetables as you prefer.
  2. Heat Oil in a non-stick pan.
  3. Add all of the vegetables and sauté for 1-2 minutes.
  4. Add Salt, Garlic Powder and Red Chili Flakes.
  5. Continue cooking until most of the juices dry up. Keep mixture aside.
  6. Heat Oil in a non-stick skillet.
  7. Place one flour tortilla over the oil and immediately flip over.
  8. Cook until light golden brown.
  9. Flip over and spread cheese over the tortilla.
  10. Spread vegetable mixture over the cheese.
  11. Cover with another tortilla.
  12. Spread a little oil over the top of second tortilla and flip over.
  13. Cook until tortilla is light golden brown and cheese is melted.
  14. Cut into quarters and serve hot with salsa, sour cream or guacamole.

Chicken/Paneer Tikka Masala

Ingredients

Boneless, skinless Chicken Thighs – 1 lb, cut to bite size pieces
OR
Paneer – 14oz block, cut into 1” cubes
Marinade:

Lemon Juice 1 tbsp
Red Chili Powder to taste
Salt to taste
Yogurt 1/2 cup
Ginger & Garlic Paste 4 tsp
Tandoori Masala 2 tsp
Green Chilies to taste, minced
Coriander Powder 1 tsp
Cumin Powder 1 tsp
Oil 1 tbsp

Method
  1. Chicken – wash, clean and cut to bite size pieces. Paneer – Cut to bite size pieces.
  2. Put the Chicken/Paneer in a bowl and add lemon juice to it.
  3. Allow it to rest for 5 minutes.
  4. Mix the marinade ingredients in a zip lock. Mix well.
  5. Check for salt and other spices.
  6. Add Chicken/Paneer to the marinade and mix well.
  7. Let the Chicken/Paneer marinate for 4-5 hours in the refrigerator.
  8. Thread the Chicken/Paneer on pre-soaked bamboo skewers.
  9. Broil the Chicken/Paneer in the oven on high.
  10. Cook the Chicken for 10 minutes on each side and the Paneer 10 minutes one side and 7 minutes on the other…or till the Chicken/Paneer are slightly brown.
  11. Once fully cooked, remove from the oven and garnish with onions and lemon wedges and serve with Mint Chutney.

Tips
  1. The Paneer and the Tandoori Masala can be made at home or can bought at any Indian grocery store.
  2. This recipe works very well for the barbeque as well as to makes for great appetizers and snacks.
  3. Every oven is different and varies. so do keep an eye on the Chicken/Paneer, so it does not burn.
  4. We prefer mixing and marinating the Paneer in a bowl, as it is very soft and can break very easily.

Spicy Chicken Nuggets (Chicharrones de Pollo) Recipe

Ingredients

dark rum 1/4 cup
lime juice 1/4 cup
soy sauce 1/4 cup
sugar 1 tbsp
boneless chicken thighs or breasts, cut into 1 1/2-inch pieces 1 1/2 pounds
Vegetable oil (canola oil, grapeseed oil, peanut oil or other high smoke point oil)  
flour 1/2 cup
teaspoon salt 1/2
teaspoon paprika (hot or sweet) 1/2
Lime wedges
Hot sauce


Method
  1. Prepare marinade, stirring together lime juice, rum, soy sauce, and sugar in a bowl until sugar has dissolved. Add the chicken to the marinade and let marinate for 30 minutes at room temperature (can marinate longer chilled, but allow to come to room temp for 30 minutes before cooking).
  2. Pour enough oil in a skillet so that it comes up the sides at least a half an inch. Heat oil on medium high until it is shimmering and a little pinch of flour sizzles when you drop it in the pan.
  3. While the oil is heating, whisk together the flour, paprika, and salt in a bowl. Remove the chicken pieces from the marinade and pat dry with paper towels. Dredge the chicken pieces in the flour mixture and transfer to a plate.
  4. Fry the chicken in batches (about 3), about 3 minutes on each side, until deep golden brown and the chicken is cooked through. (If the chicken is browning too quickly, reduce the heat a bit). Remove to a plate lined with paper towels to soak up the excess oil.

Monsoon foods are sweeter and more citric than normal and packed with a lot of essential nutrients that provide comfort and relief. Some of the best monsoon fruits are the cherries, litchi, Peach.
 
Cherry
  The cherries you would choose should be plump with pleasing green stem and glossy skins. Do not buy cherries that are dull, spongy or damaged. Cherries that are small and hard do not have flavor and are not juicy enough. If the cherries are a little yellow you can still opt for them. After purchasing them it is best to keep them in the refrigerator in a plastic bag. Cherries are perishable so finish them off soon.
 
litchi
  You should buy litchis that are in bundles with stems and leaves and not the ones that are sold loose. The darker the color the better it will taste. Do not buy the ones with faded skins. Litchis free of marks and blemishes are better to taste and are not damaged. Eat them soon after purchase as they taste the best when fresh. They can be stored till up to a week in the refrigerator.
 
Peach
  when you buy the peaches; ensure the flesh is firm but yields to gentle pressure. The ones which are rich yellow in color are best to taste. Sniff the peach before you buy them, a good peach should have a distinct peachy aroma.

Bharat Petroleum In The Fortune 2011 Global 500 List

BPCL has secured 272nd position during 2010-11 in the prestigious list of Fortune Global 500 climbing by 35 ranks as compared to 307th position last year. Consolidated revenues increased to US$ 34 billion from US$ 27 billion during 2010-11 resulting in year-on-year growth of 28.2 %.

Apart from BPCL, only seven other Indian companies have made it to the list of top 500 companies compiled by Fortune magazine. Among the Indian companies, BPCL jumped to 3rd position as against 4th last year. The comparison with other Indian companies is as under:

Bharat Petroleum Corporation has once again been voted as the 'Business Superbrand' in recognition of its goodwill, customer loyalty, longevity and market dominance. This recognition comes close on the heels of the status of Power Brand granted to Bharat Petroleum.

The 'Superbrands' are selected through a two-tier process involving consumer feedback and then scores being awarded by the Superbrands Council.
